The fitness ball goes by a whole host of names, most often the "Swiss Ball". It's a large, inflatable ball made of elastic rubber, which is big enough and strong enough to sit on. You can even use it as an office chair!
The idea behind the fitness ball is that it offers what is basically an unstable surface to either sit or work from. The instability forces the muscles of the body to constantly correct themselves to prevent you falling off - just sitting on a fitness ball is therefore good exercise!
